When Whiskey Experiments Fail

The Curiosity That Starts the Experiment

Whiskey people love a good experiment.

At some point most of us look at a bottle of bourbon, glance over at something in the kitchen, and think, I wonder what would happen if…

That curiosity is how I ended up buying a food dehydrator.

My idea was simple: if bourbon picks up incredible flavors from charred oak barrels, surely it could do the same with fruit. Oranges, blackberries, pears, cranberries — all things that already show up in bourbon tasting notes. It seemed like a natural fit.

But I also had a rule.


Let the Whiskey Do the Work

Anything I infuse into whiskey has to be dry.

I like for the whiskey to do the work, much like how it draws flavors from the charred oak barrels during aging. If something I want to experiment with is juicy, I’ll run it through the dehydrator first — not until it turns into fruit chips, just long enough to pull out most of the moisture.

And there’s another rule: no added sugars and nothing that dissolves into the whiskey.

The goal isn’t to sweeten the bourbon. The goal is to see what flavors the whiskey itself can extract.


The Dehydrator Phase

With my dehydrator humming away on the kitchen counter, I started experimenting.

Slices of orange went in first. Then blackberries. Pears. Cranberries. One by one they made their way into jars of bourbon to see what would happen.

Unfortunately, the answer was… not much.

None of the infusions were terrible, but none of them were particularly interesting either. Most of them landed in roughly the same place: flat, a little dull, and in some cases slightly bitter.

The orange infusion didn’t really taste like bright citrus. The blackberry didn’t turn into rich berry notes. Even the pear — which seemed like a promising candidate — just faded quietly into the background.

Different fruits. Same result.


Why Fruit Infusions Can Taste Bitter in Whiskey

Part of the problem is how alcohol extracts flavor.

Whiskey is an aggressive solvent, which means it pulls compounds from fruit that water or tea might not. Along with the pleasant aromas, it can also extract tannins, pith bitterness, and compounds from skins and seeds.

Blackberries, for example, contain a surprising amount of seed tannin. Citrus peels can bring along bitterness from the pith. Even dehydrated fruit can concentrate those elements.

Instead of bright fruit flavors, the result can end up tasting a little flat — or worse, slightly bitter.

When an Experiment Just Doesn’t Work

I briefly wondered if the problem was quantity. Maybe I just needed more fruit. Maybe a heavier ratio would push the flavor further.

But after a few rounds of experimenting, the excitement had worn off enough for me to admit something.

This experiment just wasn’t working.

And honestly, that’s okay.

Not every whiskey experiment needs to end in a breakthrough discovery. Sometimes the result is simply learning what doesn’t add anything worthwhile to the glass.


A Lesson Worth Keeping

In this case, the lesson was pretty simple: bourbon already does a pretty good job of tasting like fruit all on its own.

The caramel, oak, and fermentation character already produce plenty of notes like orange peel, dark berries, and dried fruit. Trying to force those flavors in with dehydrated fruit didn’t make them better — it mostly just made them muddier.

So the dehydrator experiment was officially retired.

That said, I still like the rule.

Keeping the infusion ingredients dry and letting the whiskey do the work keeps the process simple and honest. No sugar, no syrups, no shortcuts — just bourbon interacting with whatever you put in the jar.

Some ideas work.

Some ideas don’t.

But every once in a while, one of them turns out surprisingly good… and that’s what keeps the experiments going.
